How to Plant and Care for an Ice Cream Bean Tree (Inga edulis)
The Ice Cream Bean Tree is a fast-growing, tropical fruit tree known for its sweet, vanilla-flavored pods. It thrives in warm, humid climates (USDA zones 9–11) and needs space to grow.
Planting in Ground
- Site: Choose a sunny location with well-draining soil.
- Digging: Dig a hole twice as wide and as deep as the root ball. Loosen surrounding soil.
- Planting: Place the tree in the hole so the root flare is level with the soil surface. Backfill with native soil.
- Watering: Water deeply right after planting. Keep soil consistently moist but not soggy for the first 6 months.
- Mulching: Apply 3" of mulch around the base, keeping it 2" away from the trunk.
Container Planting (for patios in warm zones only)
- Pot: Use a large (25+ gallon) container with drainage holes.
- Soil: Use rich potting mix with compost.
- Watering: Water until it drains out the bottom. Repeat when top 2" of soil is dry.
- Sun: Full sun for 6–8 hours/day.
Ongoing Care
- Water: Deep water weekly during dry periods for the first 2–3 years.
- Fertilize: Use a balanced slow-release fertilizer in spring and summer.
- Prune: Lightly shape tree in late winter. Remove dead or crossing branches.
Harvesting
- Time: Pods are ready 2–3 years after planting, once mature.
- How: Pick pods when they begin to split open. Eat the white pulp around the seeds.
